What To Do With Leftover Mashed Potatoes: Asian style

Do you remember the my earlier post on "Tips to survive on a single income"? I mentioned something about saving money and planning your meals with leftovers. I have a few personal recipes to share, most of them are passed down from my mother. I know there are many variations around but what matters most to me is to use whatever I can find in my fridge or pantry, and give it a complete makeover without comprising on taste.

This recipe below is very simple, quite similar to potatoes patties except that it has a bit of Asian twist to it. Though using only a few ingredients which is mainly vegetables, it is still my all-time childhood favourite. My mother would make this dish whenever there is leftover potatoes from the previous meal.

Vegetable Croquettes:

Any reasonable portion of leftover mashed potatoes.


About 5 tablespoon of rice flour. You can use plain flour but rice flour will make the croquettes crispier when fried.

2 onions, chopped and peeled.

2 carrots, chopped and peeled.

200 grams of peas.

200 grams of sweet corn.

2 teaspoon of soy sauce.

2 tablespoon of oyster sauce.

1 tablespoon of sesame oil.

A few dashes of freshly ground pepper.

Note that you can always use frozen mixed vegetables for convenience. All sauces all be found in Asian aisles of your local supermarket.

Method:

Add rice flour to mashed potatoes for a soft but malleable dough.

Roll it out on lightly floured worktop till about 4mm thin. Using a pastry cutter, cut out rounds of pastry about 10cm in diameter.

Heat 2 tablespoon of oil in a wok and fry the onion till fragrant but not too soft.

Add the rest of the vegetables and seasoning and fry the vegetables for about 2 minutes.

Remove from heat and leave to cook.

Scoop a little of the filling and place on the pastry. Fold to seal and roll between your palm to form a ball. Flatten and dust with a little cornflour. Repeat until the filling and pastry is used up.

Fry the croquettes in hot oil till golden brown.

Drain thorough before serving.

This dish is good with rice or you can serve it as a finger food to go with beer. My husband loves Vegetables Croquettes over a few cans of Tiger while watching soccer on telly with his rowdy buddies!
