One-Dish Asian Meal Recipe I

Whenever the word "one-dish Asian meal" is mentioned, most people tend to associate it with the very popular Oriental Fried Rice or Pork Fried Rice. However, there are many easy to prepare and equally delicious one-dish meals around. Today, I am going to show you how you can whip up a tasty meal in 30 minutes.

For Claypot Rice which serve 2 to 3 persons (if you do not own a claypot, you can cook this recipe in a rice cooker) , you will need:

4 pieces of chicken drumsticks or chicken breasts

1 pair of Chinese sausage, which is available from Asian grocers or your local supermarket. You can buy more than a pair as they keep well in the refrigerator for a long period of time.

6 pieces of dried Chinese mushrooms. Shiitake is good. Wash well and soak in water for 5 minutes before using. Do not discard the water, this can be used to make the rice more flavourful.

1 tablespoon sesame oil

2 tablespoons of cooking oil

2 tablespoon dark soy sauce

a pinch of salt and a dash of pepper

1/4 cup of ginger juice

2 cups of rice

Method:
Cut chicken into bite size pieces. Slant cut sausages into thin slices. Cut mushroom into thin strips.

In a bowl, combine chicken, sausage, mushrooms, sesame oil, cooking oil, soy sauce, salt, pepper and ginger juice. Mix well and marinate for 20 minutes.

Wash rice till water runs clear. Cook rice in claypot with mushroom stock over high flame for 5 minutes. Add the marinated chicken pieces and sausages. Cook over low flame for 30 minutes. If you are using rice cooker, cook the usual way as you would normally do and just add in the ingredients. Let the rice cooker do the cooking. I highly recommend this method if you are pressing for time and want to cook ahead.
